    When opening the package (open this end), the knife blade was exposed. The knife happened to slip out of the cardboard cover. Just want to give a warning when opening these packages. It looks like the cardboard cover is for just about any knife that they carry. The knife I ordered was a 3.5 in paring knife. The cardboard cover is most likely for the 7 to 8 in knives.

    Easy to maintain as they are stainless steel, rather than high carbon steel blades. Extremely sharp and so much easier to use than conventional European kitchen blades, such as Henkels and Sabatier, this Shun economy line cutlery, being less expensive also.

    Knife is very easily maintained by use of ceramic hones and leather strop. Sharpens easily on 1000 - 3000 grit stones, if you are familiar with using water stones.

    The knife edge arrived sharp. I tested it out on a cooked chicken breast (didn’t shine there), then chopped up some veggies. It is a bit heavier than is comfortable, and I started feeling pain in my hand after chopping a few carrots, celery, and onions. So, I can’t give it 5 stars as I’m not sure how I feel about the knife yet. Cuts through paper with ease and I also managed to take a chunk out of my finger while messing around with the paper slice test! The tip is lethal. Be very careful with it.

    Es un buen cuchillo, muy afilado pero por el precio (cerca de mil dos cientos pesos) amazon tiene mejores opciones. Si bien me decidí a probar la marca SHUN debido a su gran reputación, creo que a este cuchillo le falta un mango mas ergonómico y de mejor material ya que es platico duro. Ademas no me parece que sea muy resistente a la corrosión, con una sola vez que olvide sacarlo se mancho. Con lo que pague por el bien pude haber adquirido un cuchillo de acero damasquino.

    There are many good honing steels available and this is one more. The main attraction for me is that it has a guide to help me adjust to the 16 degree angle that is appropriate for my Japanese knives. It is also important that one face of the rod is plain steel without any sharpening function. That is what you really want for honing and it is all that I use with this rod.

    Owning a few Shun regular series... this is not a winner for me. If you can find it on sale then buy it because it is SHARP out of the box... but it only has the VG edge, and not the core that the Damascus blade has.

    I'll add that this is only a 6 inch knife... so even though it looks like the 8" in proportion, it is a small utility knife.

    If you want a true Shun, my fav is still the DM0706. Or if you can afford it the Premier series (Please note that I can't afford it so I will not truly recommend)... but the handle and blade are really attractive.

    The quality of the knife is good in general, though the plastic handle feels cheap. (They must be deliberately doing so, to differentiate their product lines. This is fine for me as it does not impact functionality. ) It is well-balanced and pretty sharp (but not exceptionally so in the price range, the ceramic knives from Kyocera is sharper [but is more likely to chip]. ). The knife is pretty thin, so it can only be used with vegetables and (fresh or defrosted) meat. It has a very sharp and thin tip, hence the tip is likely to be bent is proper care is not taken.

    The thing is that Shun knife is pretty overpriced in the US market. Since the Sora version is exclusively for US market, you cannot get a cheaper one same as this knife (There are composite blade knives similar to this from this company at a much lower price. With wooden handles, of course. ). However, for the price you pay, you can actually get the Japanese domestic version of the fancier DM0718 (which currently is about twice as expensive as this knife), plus shipping it to the US. (Of course, to do that, you first have to know that the domestic brand for Shun is Seki Magoroku [' '' in Kanji], then try to buy it using Rakuten [because amazon.co.jp does not ship knives overseas], and wait for one month for delivery, and you won't have warranty for the knife in US. I did not do this because I need a knife to cook now, BUT I mention it to let you know that this knife is much more expensive in US than in its domestic market.) Hence, I have to deduct one star for this kind of price discrimination.

    This knife is very elegant and I love using it. It has a very sharp blade which is really nice to use and to look at. This knife will cleanly slice through bread like no other knife that I have ever used. The ergo's on the handle are extremely nice and it fits in hand really well. All in all this is very impressive knife. My only complaint (and why I gave it 4 stars and not 5) is with the flexibility of the blade. This knife and all of the other knives in the Shun Sora collection all make a scary sound when you flex them from side to side. I am not sure if it is coming from the handle or the blade itself. It sounds like the blade will snap in half if you flex it more than a few degrees to either side. This knife was not cheap and I am not willing to test the lateral strength of the blade to see if it will hold up to hard use. Granted it is a kitchen knife and not made for hard use but I feel that a kitchen knife has to be able to flex from side to side without fearing it will break.
